Monster Eye Cookies


What do you do when you have apparently run out of flour and can't get to the grocery store until the next day? You improvise. Thank goodness I had a Halloween cake mix in the house because I wanted to use up some of the many, many packets of candy eyeballs that I have. The cream cheese makes these cookies so moist and fluffy on the inside! I somehow limited myself to two as they came out of the oven...

Ingredients:

1 box cake mix (I used the Halloween Funfetti)
1 stick margarine, softened
8 oz. cream cheese, 1/3 less fat, softened
1 egg
Powdered sugar
Green (or any color) food coloring
Candy eyes


In an electric mixer, beat the margarine, egg and cream cheese until everything is well combined. Add the cake batter and a few drops of green food coloring and mix just enough to beat the cake batter in. Refrigerate the dough for at least 20 minutes. While the dough is chilling, preheat the oven to 350 degrees. Pour about 1 cup of powdered sugar into a shallow bowl. Line a baking sheet with parchment paper. Using a small spoon, scoop about 2 tsp. of batter and roll to form a ball. Roll the dough ball in powdered sugar until fully covered, and then place on the prepared baking sheet. Repeat until the tray is full (about 14-16 will fit on a standard tray, leaving room for them to slightly grow).


Bake for 12 minutes until the bottom is golden brown. As soon as they come out of the oven, add a few candy eyes. When the cookies cool, the sugar eyes will stick to the cookie.

*This recipe can also be made with any food coloring, and without the spooky eyes to make it an everyday cookie!
