1 container Pillsbury Biscuits
1 egg
2 tbs. sour cream
2 tsp. Italian seasoning
1/2 green pepper, small diced
2 green onion, chopped

Preheat the oven to 375 degrees. Grease a mini muffin pan with cooking spray. Remove the biscuits from the container, and cut each round biscuit into four equal pieces. Take each small pieces of biscuit and roll into a circle and place in each hole of the mini muffin pan. Whisk the egg, sour cream and Italian seasoning together in a small bowl. Once mixed stir in the green pepper and onion. With a small spoon, add a spoonful of the egg and vegetable mixture over each biscuit ball. Once all of the biscuits are covered, place in the oven for 10-13 minutes until the egg is cooked and the bottom of the biscuits are golden brown. Let cool slightly in pan before removing. Serve while warm.
