Spinach and White Cheddar Bagel Bread Pudding


Ingredients: 

4 eggs
1 1/2 c. milk
2 tsp. dill weed
salt and pepper
3 bagels, ripped into small pieces
1/4 c. white cheddar, cubed
9 oz. frozen spinach ( I use Green Giant)

Preheat the oven to 375 degrees. Whisk the eggs, milk, dill weed, salt and pepper together in a medium size bowl. Microwave the spinach as directed on the box. Place pieces of bagel on the bottom of a greased nine inch pie pan. Squeeze the spinach dry with your hand and sprinkle over the top of the bagels. Sprinkle the cubed cheese over the spinach. Pour the egg mixture evenly over the top of the Bread Pudding. Cover the pie plate with saran wrap and refrigerate for 30-45 minutes. Bake in the oven for 40 minutes. Let cool slightly before serving.
