Cheddar Chorizo Jalapeno Poppers


Ingredients:
8 oz. uncooked chorizo
1/2 lb. white cheddar, shredded
1/4 c. fine chopped red onion
1 egg
1/2 c. cream cheese
3 Tbs. sour cream
1 Tbs. hot sauce
Salt and Pepper
12 Jalapenos, stemmed seeded and halved

Preheat the oven to 375 degrees. Brown the chorizo on medium-medium high for 10 minutes. Drain and place in a bowl. Add the rest of the ingredients minus the jalapenos. Press the mixture into the peppers. Assemble on parchment lined baking sheet. Bake for 20 minutes. Let cool slightly and serve.
