Lasagna Roll-Ups





Ingredients:

9 Lasagna Noodles, cooked according to package
1 jar Traditional Prego pasta sauce
8 oz. Cottage Cheese
1 egg
1/8 c. dried Parsley
1 c. grated Parmesan Cheese
1 c. shredded Parmesan Cheese
Salt and Pepper

Preheat the oven to 350 degrees. Grease a 13x9 pan with cooking spray. Pour 1/2 c. pasta sauce onto the bottom of the pan and spread out.  In a medium size mixing bowl, combine the cottage cheese, egg, Parsley, grated Parmesan and salt and pepper. Lay one lasagna noodle out on a flat surface. Eyeballing, spoon a portion of the cottage cheese onto the noodle (1/9 of batter). Starting at one end, roll the lasagna noodle until the seam is on the bottom. Place on the bottom of your pan. Repeat until all of the noodles are gone. Spoon the rest of the pasta sauce onto the noodles and top with the shredded Parmesan cheese. Bake in the oven for 40-50 minutes.
