Chicken Taco Taquitos



Ingredients:
2 (5oz.) cans of white chicken, drained and flaked into a small bowl
1 small green pepper, chopped and added to bowl
2 green onion, chopped and added to bowl
3/4 c. shredded cheddar cheese, added to bowl
4 oz. cream cheese, room temperature
2 tsp. Taco seasoning
6 tortillas
salsa

Mix the ingredients in the bowl together and set aside. Mix the softened cream cheese and taco seasoning together. Lay a tortilla out on a flat surface. Spread 1/6 of the cream cheese mixture onto the tortilla. Spoon 1/6 of the chicken mixture on top of the cream cheese and spread out evenly, leaving 1/2 inch at the end of the tortilla with nothing except the cream cheese mixture on it. Roll the tortilla starting at you and rolling upward. Press down at the end where just the cream mixture is and leave seam side down and set aside. Repeat for the 6 other tortillas. Set a pan on medium heat. Place half of the Taquitos seam side down in a greased pan. Cook for about 2 minutes on the seam side, and then start rotating to make the rest of the Taquito golden brown. Serve warm and with salsa!
