Pumpkin Snack Cake



Ingredients:
1 box yellow cake mix
3/4 c. canned pumpkin
1/2 c. water
1/2 c. vegetable oil
3 eggs
1 pkg. (8 oz) cream cheese, softened
1 stick butter, softened
1 tsp. ground cinnamon
2 c. powdered sugar

Preheat the oven to 350 degrees. Mix the pumpkin, water, oil and eggs in a large bowl with a whisk. Add the dry ingredients and whisk together until fully incorporated. Spray a 13x9 pan with non stick spray. Pour the batter into the pan. Bake for 26-30 minutes. Cool for an hour before frosting. Meanwhile, while the cake is in the oven, mix the cream cheese and butter in an electric mixer until creamy. Add the cinnamon and powdered sugar. When fully mixed, spread on top of the cake and refrigerate for an hour before serving.
