Angel Food Cupcakes



My nephew was in the hospital this past weekend having emergency surgery and is now on the mend, so I thought I would make him some of his favorite cupcakes, Angel Food, to bring to him this weekend. Now, these are not obviously home made, nor hard to make, but when you run out of meringue powder and have little time they will do in a pinch!


You only need three ingredients; 1 box Betty Crocker Angel Food Confetti Cake mix, 1 1/4 c. water, and 5 drops of food dye (if you want more of a pastel color). Mix the food coloring with the water before adding it to the cake mix. Whisk in an electric mixer until the volume almost doubles in size. Preheat the oven to 375 degrees. Line muffin tins with paper liners, and fill 3/4 full with the Angel Food Cake mix. Bake for 10-12 minutes until slightly golden brown on top. Let cool for about 2 minutes in the pan and then transfer them to a wire rack to cool the rest of the way.

Decorate with frosting, cool whip, sliced fruit, or cute picks and sprinkles!
(Makes 36-48 cupcakes, 1 WW points per 1-3 cupcakes.)
