Pumpkin Cupcake Mini Muffins


Ingredients:

1 box Duncan Hines White Cake Mix
1 egg white
1 c. Pumpkin, puree (not pie filling)
1 c. water
1 tsp. pumpkin pie spice
1 Tbs. cinnamon
1 Tbs. sugar

Preheat oven to 375 degrees. Spray mini muffin tins with cooking spray and set aside. Mix the cake mix, egg white, pumpkin, water, and pumpkin pie spice together in a large bowl using a spatula. When all of the ingredients are combined well, spoon into 48 mini muffin tin cups. bake in the oven for 10 minutes, and place on wire racks. Combine the cinnamon and sugar together and sprinkle on top of each muffin. Let cool fully on wire rack, and store in air tight container.

(Makes 48 min muffins, 1 WW point per muffin.)
