Oatmeal Chocolate Chip Muffins


Ingredients:

1 c. Quaker rolled oats
1 c. milk, 1%
1 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 c. brown sugar
1/2 c. applesauce
2 egg whites
1/2 tsp. salt
3 Tbs. mini chocolate chips

Preheat oven to 375 degrees. Place oats in a small bowl and pour milk on top. Stir to combine the two together. Set aside and let sit for 10-15 minutes so that the oats soak in all the milk. Grease a 12 cup muffin tin with non stick cooking spray. In a large bowl, whisk the flour, baking powder, baking soda and brown sugar together. Stir in the oats/milk, applesauce and egg whites. Divide the batter evenly among the baking cups. Bake for 23-27 minutes until the tops are firm. Let cool on wire rack.
