Pumpkin Muffins

Ingredients:

1 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg
1 c. Splenda
1/2 c. canola oil
2 eggs
1 c. pumpkin puree
1/2 c. applesauce

Preheat oven to 375 degrees. Whisk the flour, baking soda, salt, cinnamon, nutmeg and set aside. In another bowl, whisk the sweetener, oil, eggs, puree and applesauce. Slowly combine the dry ingredients into the wet ingredients with a spatula until they are well mixed. Pour into a muffin tin lined with paper liners, and bake for 20-23 minutes or until the center comes out clean on a toothpick. Let cool fully on a wire rack.

(Makes 12 muffins, 5 WW points each.)
