Skinny Slow Cooker Philly's



Ingredients for the slow cooker:

2 lb. Beef Arm Chuck Roast
2 green peppers, sliced
1 large onion, peeled and sliced
2 Tbs. dried leaf thyme, divided
2 Tbs. garlic salt, divided
2 1/2 c. chicken stock (low sodium)
1 1/2 Tbs. black pepper, divided


Place the beef on the bottom of the slower cooker. Add the peppers, onion, 1 Tbs. thyme, 1 Tbs. garlic salt, chicken stock and 1 tsp. pepper. Cook on low for 8-9 hours and turn back down to warm. Take the meat out and trim all of the fat. Flake with a fork and place back into the slow cooker. Add the remaining 1 Tbs. thyme, 1 Tbs. garlic salt and 1/2 Tbs. pepper and stir all together.


(Makes 8 servings, 6 WW points each.)

To make sandwich style, you need bread toasted (or a hoagie or hot dog bun), French onion laughing cow wedges, and shredded Parmesan cheese.
