Strawberry Fudge Cupcakes


Ingredients:

1 box strawberry cake mix
3 eggs
1 c. water
1/3 c. oil
1 1/2 c. chopped strawberries
1/4 c. chocolate fudge topping (roughly)
Chocolate frosting

Preheat the oven to 350 degrees. Line cupcake tins with paper liners and set aside. In a large bowl, whisk the cake mix, eggs, water and oil until well combined (it is fine if there are still small lumps in the batter). Stir in the strawberries. Divide evenly among 24 cupcake tins, about 3/4 of the way full. Drizzle about 1 tsp. worth of fudge topping on each cupcake, and with a knife, make a zigzag pattern through the chocolate. Bake in the oven for 18-20 minutes. Let cool for five minutes in the cupcake tins before removing and cooling fully on wire racks. Top each with a dollop of fudge in the center of the cupcakes when fully cool. Then, pipe chocolate frosting around the dot of fudge topping and then on top so it becomes hidden.
