Baked Pepperoni Zucchini



Ingredients:

2 medium zucchini, cleaned, dry and cut in half
Non stick cooking spray
1-1 1/4 c. shredded reduced fat cheddar cheese
Garlic Salt
Fresh cracked pepper
Mini Turkey Pepperoni (I used Hormel, less fat)

Preheat the oven to 350 degrees. Spray the zucchini with non stick cooking spray. Season each piece with garlic salt and pepper. Add the mini turkey pepperoni, and then top with the shredded cheddar. Place on a parchment lined baking sheet, and bake in the oven to 15 minutes. Broil for 3-5 minutes to make the cheese topping crunchy. Serve warm.

*You can serve this as the main dish, cut into halves and serve as a side dish, or cut even smaller and add toothpicks to make for an appetizer.
