Ingredients:
2 small sweet potatoes, peeled, cut in half lengthwise, cut into slices about 1/4 inch thick, and then cut again into skinny long strips
1 Tbs. extra virgin olive oil (or olive oil non stick cooking spray)
1 Tbs. freeze dried chives (or fresh if you prefer)
1 tsp. garlic salt
1/2 tsp. fresh cracked pepper
Preheat the oven to 400 degrees. Toss the sweet potato sticks in a small bowl with the oil and seasonings. Spread out on a parchment lined baking sheet, making sure they are all in a single layer. Bake for 10 minutes, flip or stir around, and bake for another 10 minutes. Let cool slightly before serving.
