Cinnamon Swirl Loaf



Ingredients:

2 Tbs. sugar
1 c. warm water
2 1/2 tsp. yeast
2 1/2 c. bread flour
1 tsp. salt
2 Tbs. olive oil
2 Tbs. cinnamon
1/2 c. white sugar

Mix the 2 Tbs. sugar with the warm water in a large bowl. Add the yeast (without stirring) and let sit for 5 minutes. Add the oil, salt and flour. Use your hands to mix everything together until the dough forms a large ball. Add flour to your work surface and knead for 5 minutes. Place the dough in a slightly oiled bowl and place a damp towel on top. Set in a warm area for 1 hour. Divide the dough in half.

Preheat the oven to 350 degrees. Roll each half into a large rectangle. Sprinkle the top of each with a layer of cinnamon and a layer of sugar. Roll the loaves up tight and let rest for a few minutes on a parchment lined baking sheet. (I rolled my bread up the wrong way, it was a late night, so it ended up making french bread looking loaves. Don't worry! It still tasted the same!). Bake for 30 minutes. Let sit until cool before slicing.
