Shredded Chicken Taco Meat

I ended up doubling this recipe, using about 10 chicken breasts. There are SO many uses for this shredded taco chicken that I have a few ideas on how to use it pictured after the recipe!


5 boneless, skinless chicken breasts
1 pkg. taco seasoning
1/2 jar mild salsa (about 1 1/4 cup)

Place the chicken breasts in the  bottom of the slow cooker (I used a slow cooker liner so that I wouldn't have to wash it out afterwords. Convenient when you are out at camp!). Pour the salsa on top and sprinkle with the taco seasoning. Let cook for around 8 hours on low (5 on high), until the chicken is done and fork tender. Remove the chicken from the cooking liquid and shred with two forks on a cutting board. Place back into the liquid and cook for another 30 minutes on low.
